Our applewood smoked bacon is a whole belly dry-cured with kosher salt and brown sugar, and uses celery powder as the source of sodium nitrite (providing the "Uncured" label". It is smoked over applewood before aging 1-3 weeks to remove water weight and concentrate flavor.
