Tails & Trotters pepper bacon perfectly balances the natural richness of our hazelnut-finished pork with the piquant nuttiness of black peppercorn.
Unlike most pepper bacons which are just smoked bacon with ground pepper tossed on top when packaged, we take whole dry-cured bellies and thickly coat them with a ground peppercorn crust before aging for 2-4 weeks. The aging process concentrates the flavors, and gives our pepper bacon a richer color.
Vacuum-packed in bags of 8 slices averaging ~2/3lb each. Sold in units of 3 packages.
